Pistachios grow on a pistachio tree in clusters that resemble grapes. Once ripened, their shells split open naturally, indicating that they are ready to harvest. Most pistachios are produced in Iran and California. Unshelled pistachios last longest when kept in the refrigerator where they will stay good for up to three months. Or, you can freeze them for up to a year. Pistachios in their shell can also be refrigerated for up to three months but are not very good for freezing.
